I’ve been up since 5:30am typing this out. Yes, I’m THAT excited to share the new post with you right before I head out to work early this morning. Now, where’s my cuppa coffee?
McCutie has been asking me for a specially baked cheesecake even before I started making my un-molten disaster. And just when you thought that would have put me off baking… think again, honey. Armed with Jamie’s new cookbook (which McCutie bought for me by the way- TQ!), Jamie’s America, McC got that wish answered.
For starters, I’ve always been a fan of Jamie for the simple reason that his recipes are fuzz-free. Perfect for lazy monkeys like yours truly. Now enters this new recipe on page 37, the “My NYC Cheesecake,” that has inspired to embark on my second baking quest. I have to admit that Jamie’s no-nonsense writing style has always been rather easy and very assuring for any beginners to follow. No sweat about it.
Once again I had all my ingredients laid out and started throwing it all in the mixing bowl. As I mixed the rather thin cheesecake mixture by hand (because I don’t have an electrical mixer), I became doubtful. I couldn’t help thinking that something was going to go wrong. Everything was just going too smoothly, if you know what I mean.
“Did I put in everything in the right sequence?”
“Did I whiz it the right way?”
“Did I miss putting anything together?”
“Did I …. blah blah blah…”
Oh well, what’s the worse that could happen? With watchful eyes I put the cake mixture into my small little but very capable oven (who needs a RM10,000 oven right?). Then I proceed to performed the impossible, whisking the coconut meringue topping by hand. It was then that I really wished I should have tried harder at winning one of these (and a food processor too!) from Jamie’s #JamiesTwitchen competitions. Ho-Hum. My arms nearly fell off trying to beat the egg white and sugar mixture into a thick and glossy mixture. It continued to hurt the next few days too. No pain, no gain.
The end result was a wonderful (to my surprised) light textured lime flavoured cheesecake with a nice twist of coconut meringue at the top. McCutie loved it to bits and called it a resounding success. So did my colleagues who were lucky enough to try it. Guess that’s the end of my first cheesecake (and meringue) saga. This has definitely given me a boost of confidence to make some for the rest of you try… in due time. Perhaps alilfatmonkey can bake after all. The Force is still strong.
In the end, Jamie isn’t the only person I have to thank. How can I write about baking without thanking Ah Pa right? I had to SMS the old man while he was enjoying thick fresh snow with his family. But thankfully he didn’t forget about this Ah Boy and dutifully performed his paternal duties. His replied, “Use nothing more than 3/4 cups of sugar…now bugger off. Cis!”
