An Egg-cellent Start to the Weekend

On any regular day, a cup of coffee is all it takes to start up one’s day. But when the sun rises over the weekend, the thirst for caffeine is often replaced with something more superficial and chirpy. Something like a bowl of boiled eggs mounted above some perfectly grilled sausages (you know, the crispy on the outside yet juicy and meaty inside kind), and surrounded by plump ruby-coloured cherry tomatoes. Dressed in nothing but balsamic vinegar, honey and the extra virgin olive oil you can find. Light sprinkles of grounded paprika and black pepper follows to add a tiny stimulation to the palate, while a few pinches of fresh lemon thyme leaves lend the dish an aromatic sunshiny scent and not to mention elevating its visual appeal too.

Then move on to pour yourself a glass of hand-squeezed O.J or make yourself a nice cup of Aik Cheong Kopi with some sweetened creamer. Now, close your eyes and exhale as you enjoy the first bite into your splendid weekend. Enjoy.

I’ve had an egg-cellent start to the weekend with a frittata for breakfast and an omelette for lunch — maybe roti telur for dinner? ;)
